You’ve probably noticed that we’re proud of our plums and nuts from Lindauer River Ranch, but we’re also fortunate to have amazing partners who provide artisanal ingredients that make our chocolates stand out.
Our beautiful plums are the French D’Agen variety. They burst with a sweet, rich cinnamon flavor and provide a soft chewy, candied texture.
Lindauer River Ranch boasts two varieties of English walnuts—Hartley and Chandler, which provide lovely golden-brown kernels with a nutty, mildly bitter taste.
Bruce Lindauer (Susan’s cousin!) grows some of the best pistachios in the Sacramento Valley, which we’re thrilled to include in our pistachio nougat confection.
Every Lindauer confection is drenched in 73% Nicaraguan cacao chocolate from our local partner, Portland-based chocolatier, Pitch Dark. Using single-varietal cocoa beans, this bean-to-bar chocolate contains only cacao beans, cocoa butter, and sugar.
Clear Creek Distillery uses the bountiful fruits of the Pacific Northwest to create small-batch, fruit-based spirits, like the Eau de Vie of Mirabelle Plum found in our Plum Ganache. Delicate and aromatic, the liqueur enhances the natural flavor of our plums.
Harvested from the cold, pristine waters of Netarts Bay on the Oregon Coast, Jacobsen's Flake Finishing Salt is unparalleled - Its purity of flavor, bright salinity, and delicate crunch perfectly finish our Sea Salt & Walnut Caramels.
Wooten’s Queens & Bees—a fourth generation family of beekeepers—provide the honey for our Plum & Walnut Nougat and Pistachio Nougat confections. During the early spring, the Lindauer River Ranch is home to more than 25 bee boxes from Wooten’s that pollinate our fruit and nut trees and provide a stable hive for the Queen.
When we were creating the Whiskey Walnut Truffle, we wanted to be true to my grandmother's love for bourbon whiskey. We were eager to partner with a local distiller who was dedicated to the craft of creating pure malt Oregon Whiskey. Bull Run Distillery's Straight Bourbon Whiskey pairs beautifully with our dark chocolate ganache and caramelized walnuts to make this decadent truffle.
